I had heard of nopalitos salad -- made with strips of cactus -- but until tonight when it was part of the special at the airport burrito place I'd never had a chance to try it.
I do not know if it is always this... incindiary... but this salad is certainly full of peppery goodness. I'm eating it half a bite at a time, with breaks in between bites. This may be the secret to weight loss, here--a food that is painful if eaten too quickly.

Actually Nopalitos, or young cactus pads arn't hot at all, Must be the dressing.

THey're definitely marinated, and almost certainly in the same stuff they soak the vegetable relish in. (mmmmm blistering garlic, carrots, onions and peppers.)
