The curry turned out very well. All the disappointment in last week's citrus chicken soup has been obliterated and I am once again God of Crockpots (starring Chow Yun Fat).
And that's fresh out of the pot--I can only imagine what it will be like after it's steeped in its own curriosity in the fridge for a couple of days.

EDIT:
It is blasphemy to say so, but this just became my favorite version of Darling Nikki. ZOMG.

My general cooking method is 'what do I have? let's throw some of that in as well' but my mom asked me how I made it in the original post last night, and as much of the creative process as I can recall is there in the comments. (It involved using tinned coconut milk and a bottle of yellow curry sauce, so it's not like from scratch or anything.)
