I'm trying to get back into salads, as a way to increase my intake of raw vegetables and fruits.
I bought more of those baby yellow squashes, with plans to sautee them or something, and wondered if they were tasty before you cooked them. So I'll try cutting a small slice tonight. In the meantime, more carrots (very little nutrition but they make it sweet) and probably white mushrooms for the protein, and broccoli and maybe green beans or something. I should have done more shopping at the farmers' market but I'm not very good at planning ahead.

Sauteed baby squashes (especially the little patty pans) in garlic cooked just to al dente is a thing to swoon over. Some people add a little tomato. I say why mess with perfection?

And baby carrots overflow with nutrition. There's enough vitamin A in a medium sized carrot to meet your daily needs and then some. Who lied to you about carrots? tsk, tsk.
