May. 13th, 2008 01:07 pmI'm trying to get back into salads, as a way to increase my intake of raw vegetables and fruits.
I bought more of those baby yellow squashes, with plans to sautee them or something, and wondered if they were tasty before you cooked them. So I'll try cutting a small slice tonight. In the meantime, more carrots (very little nutrition but they make it sweet) and probably white mushrooms for the protein, and broccoli and maybe green beans or something. I should have done more shopping at the farmers' market but I'm not very good at planning ahead.

Date: 2008-05-14 03:48 am (UTC)If you can find them at the farmer's market, try some squash blossoms. Some people fry them or stuff them. I like them sliced up and sauteed in a bit of butter, olive oil and garlic. Then I like to mix them with Quinoa or Brown Rice.
We have been trying to eat more whole grains these days. I am still on a quest for germinated brown rice I don't have to finance...
